White Peony is a classic white tea from high-altitude tea gardens in Fuding and Zhenghe, Fujian. It’s made with one bud and two leaves, exuding delicate floral and vegetal aromas. The brewed tea is golden and bright, offering notes of nougat, cherry jam, cucumber, and meadow flowers. The mouthfeel is smooth, sweet, and slightly savory like sourdough.
The leaves are sun-withered and low-baked to preserve active enzymes and polyphenols. The mineral-rich red soil and misty climate at 200–1000 meters elevation impart a signature “mineral sweetness” to this elegant tea.
