Hot Brewing Method

Teaware: Use a 110ml white porcelain gaiwan or glass teapot to observe the tea soup color changes. Avoid metal utensils that may affect the flavor.

Water Temperature: Use 85-90°C for core origin teas (such as Tongmu Pass). Outer mountain teas can be brewed at 95°C. Let boiling water rest for 1-2 minutes to cool down and prevent scalding tender buds.

Tea-to-Water Ratio: 1:20 (3g tea + 60ml water), adjustable to 1:30 based on personal taste.

Brewing Steps:

  1. Rinse the teaware with boiling water to increase temperature and enhance tea aroma.
  2. Quickly rinse the tea with 90°C water for 3 seconds to remove impurities.
  3. Pour water to 70% full. For the first four infusions, brew immediately. Starting from the fifth infusion, extend brewing time by 3-5 seconds each. Jin Jun Mei can be reinfused 6-8 times or more.
